Here’s the easy-to-follow recipe:
Serves 2
2 tbsp. olive oil
1 lemon, halved
1 tablespoon maple syrup
1 tablespoon Dijon mustard
4 cloves garlic, bashed
1 heaped teaspoon smoked paprika
A small handful of thyme sprigs
4 large chicken thighs
1 Pre heat the oven to 190 degrees Celsius.
2 Add the paprika, bashed garlic, mustard, maple and the olive oil to a large bowl with the thyme leaves and briefly mix.
3 Season well with salt and pepper, then add the chicken to the bowl and toss well.
4 Place the chicken in a baking tray and place in the oven to cook for 30-35 minutes, or until golden and cooked through.
