This blackberry and coconut porridge from @peaceloveandporridge set our taste buds tingling. Not only does the coconut milk boast lower blood pressure and cholestrol levels, but the blackberries help to improve digestive health, strengthen the immune system and could even help the prevention of some types of cancer. We love the look of this bright, exciting looking porridge.
Here’s the recipe:
Serves 1
1/3 cup oats
2/3 cup coconut milk
1/3 cup water
1 Tbsp stewed blackberries (fresh would probably work too)
1 Tbsp berry muesli I used Dorset cereals (or just some normal muesli with extra dried berries/raisins etc)
1 Tbsp lemon and lime alpro soya yoghurt
1/2 tsp agave syrup
Desiccated coconut and more blackberries to top
Method
Put all of the ingredients minus the toppings into a small nonstick saucepan pan and simmer until thickened to preference (about 5 mins) then pour into a bowl and top with a sprinkle of desiccated coconut and more blackberries.
