Satisfying suppers: Stir-fried ginger beef

This ginger beef recipe is free from wheat, gluten, dairy and sugar – and the ginger kick acts as a potent anti-inflammatory. Delicious!
Serves 4
2 tbsp coconut oil
1 onion, sliced
2 garlic cloves, minced
½ red pepper
500g beef, cut into strips
1 tsp ground turmeric
2 tsp lemon juice
2 tsp freshly grated ginger
2 tsp wheat-free tamari
2 tsp tahini
1 tsp apple cider vinegar
120g broccoli florets
125g green beans, chopped
100g mangetout, sliced
Celtic sea salt and black pepper to taste
Method

Put the coconut oil in a large frying pan over a medium heat. Add the onion, garlic and pepper and sauté for 5-7 mins.
2 Add the beef and cook, stirring, for 5 mins. Add the turmeric, lemon juice, ginger, tamari, tahini and vinegar. Continue to stir for one minute. Add the broccoli, beans and mangetout to the pan.

Cook over a medium heat for 12-15 minutes, or until the vegetables are tender.
4 Season with salt and pepper to taste, and serve with brown rice.
