Satisfying suppers: Speedy superfood stir fry

Nutritionist Julie Daniluk’s speedy stir-fry is packed with zingy superfood ingredients to help your body beat inflammation
Serves 4
450g skinless chicken breasts/beef strips/tempah in ½–inch by 2-inch strips
3 cloves garlic, minced
2 tsp extra virgin olive oil
1 tbsp grated fresh ginger root
2 tbsp honey
2 tbsp wheat-free tamari
3 cups broccoli
2 cups sliced shiitake mushrooms
2 cups red pepper or carrot, sliced
Method
1
Stir-fry meat and garlic in oil for 1 minute. Add ginger, honey and tamari. Stir until meat is cooked through, then remove with a slotted spoon.
2 Stir-fry veg in remaining sauce for 4-5 minutes until tender. Return meat to pan and stir gently. Serve immediately.
