1 tablespoon goji berries
150g mixed berries
16 small, fresh mint leaves
400ml pink champagne
20ml goji liqueur
20ml Cointreau
Crushed ice
Extra berries and mint leaves, to garnish

Method

1 Pour a small amount of boiling water over the goji berries and leave to soak for 5 minutes, then drain.
2 Fill popsicle moulds with a mixture of berries, goji berries and mint leaves.
3 Pour the pink champagne, goji liqueur and Cointreau into a jug and stir gently. Fill each mould with the mixture. Place the lids on and insert a popsicle stick into each. Place in the freezer overnight or until completely frozen.
4 Pour a little warm water over the moulds to loosen them and serve the popsicles on a tray of crushed ice, sprinkled with mint leaves and berries.
