Healthy grains recipes: Superfood black rice salad
Often overshadowed by the freekeh‘s or the quinoa‘s of the world, rice is a legitimate super-grain. Combine with juicy grapes, rich coconut oil and fragrant superfood spices for a tasty bowl of goodness.
Serves 6, as a side
1 litre vegetable stock
380g black rice
1 tbsp coconut oil
1 onion, chopped
2 garlic cloves, finely chopped
1 tsp ground cumin
1½ tsp paprika
½ tsp ground turmeric
120ml apple cider vinegar
2 handfuls kale, chopped, stems off
200g red seedless grapes, halved
55g sunflower seeds
Salt and ground black pepper
Method
1 Boil stock and rice. Then cover and simmer for 45-60 minutes.
2 Melt oil in pan; add onion and garlic. Fry until onion is translucent.
3 Add the cumin, paprika, turmeric and vinegar, mix and stir for 1-2 mins. Add the kale and stir. Once kale is soft, remove the pan from the heat.
4 Combine mix with rice, grapes
and seeds in a large bowl. Season, toss well and serve.
