Healthier cocktails: pineapple and kale daiquiri recipe

Serves 2
40ml Bacardi white rum
40ml Ciroc apple vodka
70ml fresh Granny Smith apple juice
1 handful of kale leaves
50g frozen pineapple (2cm chunks)
6 small, fresh mint leaves
250g crushed ice
Pineapple spears and pineapple wedges, to garnish
Method
1 Place the rum, apple vodka, apple juice, kale, frozen pineapple and mint into a high-speed blender.
2 Blend for 1 minute, or until completely smooth. This can take longer depending on your blender.
3 Next, add the crushed ice and blend to a slushy consistency. Pour into the glasses and garnish each one with a pineapple spear and a wedge of pineapple.
