First came the courgette crisis back in January, now it’s a hummus shortage as three major supermarkets remove their hummus from shelves following customer complaints that it tastes ‘metallic’.
Not to worry, because we’ve got two tasty hummus recipes that you can make at home – with no strange taste whatsoever. In true healthy style, both recipes have a little hint of ‘green’ – the first with refreshing coriander and zingy lemon, and the second made with naturally sweet peas to give a verdant colour.
Which one will you pick? Better still, make both and use as a delicious salad accompaniment or dip selection for entertaining friends.
Lemon & coriander hummus
Serves 2
1 can of chickpeas (Around 240g once you’ve drained the water they come in)
3 tbsp tahini
Juice and zest of 1 large lemon
Handful of coriander (Stalks and leaves, around 15g)
1 garlic clove
2 tsp ground cumin
4 tbsp extra virgin olive oil
A few pinches of Himalayan salt (Don’t be shy! You can use normal salt if you don’t have Himalayan)
A pinch of fresh black pepper
5 tbsp filtered water (You can add more if the consistency still isn’t creamy once you’ve blended it)
Method
1 Put all the ingredients into a blender and blend until smooth and creamy.
2 Spoon this hummus into a little dip bowl, garnish with some coriander leaves and drizzle on a little extra virgin olive oil.
