Free-from Friday: Kale and Pomegranate salad
We all know kale has been hailed for its goodness, but pair it with pomegranate and you’ve got a simple and scrumptious salad that’s the perfect lunchtime fuel. It’s quick and easy to make and a colourful show piece, and doesn’t have to be consigned to the office – it looks great on the table at any dinner party. Not only would you be gifting your guests with a beautiful salad, you’d be feeding them Mother Nature’s best.
Kale has made a name for itself for good reason – it contains vitamins A, C and K and is high in antioxidants. Vitamin K is required by our body for blood clotting, especially when healing from a wound, and also helps build strong bones – which makes it a great dietary addition if you’re following a dairy-free or vegan lifestyle.
All these raw ingredients bundled together, provide a rich medley of vitamins on one plate. The avocado and seeds help dress the salad and the pomegranate seeds add a surprising burst of succulent juiciness. I’d rate this dish the ‘holy kale’ of salads (couldn’t resist, sorry), so will it get your seal of approval, too?
Kale and pomegranate salad
Serves 2-3
Ingredients:
150g kale leaves
1 shredded raw beetroot
1 avocado
2 handfuls pomegranate seeds
1 handful flaxseed
1 handful sunflower seeds
For the dressing:
3 tbsp olive oil
1½ tbsp lemon juice
½ tsp honey
Pinch of sea salt
Pinch of ground black pepper
Pinch of herbs (thyme, mint)
Method:
Simply arrange ingredients in a bowl and decorate with cress and chives, if you wish. Drizzle over the salad dressing.
