Festive feasts: Christmas kale and sausage meat stuffing
Keen to impress friends and family with your festive meals? Cooking with kale is a great way to add unexpected new taste and texture.
Health-wise, kale is a great addition to any winter meal, as it is full of vitamin A and C, as well as folate – which all play a role in immune function. It’s also a fantastic source of fibre – 2.2g in four heaped tablespoons – which plays a role in digestive and heart health.
Try this nutritious twist on a Christmas classic!
Makes 16 jackets
½ x 500g pack kale
1 tbsp oil
1 onion (160g), finely chopped
10g sage, chopped
454g sausagemeat
100g breadcrumbs
Method
- Preheat the oven to 200C/180C fan/gas mark 6. Grease a large baking tray.
- Cook the kale in boiling water for 3 minutes, drain and roughly chop in a food processor. Cool.
- Meanwhile, heat the oil in a frying pan and fry the onion for 2-3 minutes, add the sage and cook for a further 1 minute. Cool and stir into the sausage meat with the kale and breadcrumbs, season.
- Mould into 16 balls and place on the prepared tray. Bake for 20-25 minutes until golden and cooked throughout.
- Serve with roast turkey and all the trimmings.
