Spicy, nutritious and packed full of plant protein – you’ll love this meat-free burger alternative.

Serves 4
1 tsp olive oils
1 onion, diced
1 garlic clove, chopped
1 red pepper, diced
1 jalepeno, diced
200 g kale, finely chopped
½ tsp ground cumin
100 g cooked quinoa
100 g black beans, mashed
2 tbsp sunflower seeds, ground
Salt and pepper to taste
Brown rice flour, as needed
Method
1 Over a medium heat, sauté the onion, garlic, jalapeno and red pepper in a drizzle of oil until softened. Add the kale and cook until softened.
2 Combine all the ingredients together to form a dough. Add brown rice flour as a binder if needed.
3 Shape the dough into 6 burgers and lightly dust with brown rice flour.
4 Fry in a small amount of oil until golden on each side, or bake for 20 minutes 200°C/180°C fan/gas mark 6.
