Better breakfasts: Fruity yoghurt with bee pollen

If you wake up feeling foggy, this could be the breakfast for you. Bee pollen is packed with nutrients to give you supercharged energy and loads of health-boosting goodies, like amino acids (the building blocks of proteins), hormone-balancing B vitamins and folic acid. Even holistic doctor extraordinaire Dr Gabriel Cousens MD named bee pollen as one of the 22 most recommended food energy sources.

Yoghurt isn’t too bad either, with recent research from the Harvard School of Public Health, published in the journal BMC Medicine, suggesting that eating just two tablespoons a day could slash your risk of developing type 2 diabetes by almost a fifth!

A delicious breakfast with a side of smug? We’re in!

Serves 4

0 per cent fat Greek yoghurt
1 large ripe mango
10 g bee pollen
75g honey
5 g mint leaves

Method:

1. Peel the mango and remove the flesh from either side of the stone. Cut these two pieces into large style ‘chips’.

2. Arrange on a nice serving dish, then spoon the yoghurt over the mango and drizzle over the fresh honey.

3. Sprinkle on the bee pollen and garnish with finely cut mint leaves
