5-minute healthy cheesecake recipe
This cheat’s healthy cheesecake recipe gives you a fraction of the calories of traditional cheesecake and takes less than 5 minutes to make. Don’t be put off by the savoury cheesy oatcakes – they’re a nice contrast to the creamy, sweet cheesecake filling. Oatcakes typically have a low glycaemic index (GI), and eating oats as part of a balanced diet can help to lower your blood cholesterol.
Makes 4
4 cheese oatcakes
30g ricotta cheese
40g “light” soft cheese
4 tsp Splenda® Granular
Few drops vanilla extract
80g blueberries
Method
1. Mix the ricotta, soft cheese, Splenda® Granular and vanilla essence together.
2. Top each oatcake with about a dessertspoon of the mix, and finish with fresh blueberries. Serve immediately.
